Handy Hints:
- If you can get your hands on a melon baller, use that to create the melon balls for this recipe, rather than an awkward spoon. The result will appear far more professional.
- Feel free to experiment a little with this recipe. Since it relies so heavily on various spices and sauces, mixing these up a little could produce some interesting results. Just try to keep it relatively subtle ;-)
Ingredients:
1 ripe honeydew melon; halved, seeded
1 1/2 cups whipping cream
1 1/2 cups mayonnaise
2 teaspoons lemon juice
1 teaspoon paprika
1/2 teaspoon hot pepper sauce
1/2 teaspoon Worcestershire sauce
2 tablespoons tomato paste
8 ounces white crabmeat; flaked
8 radicchio leaves (optional - for garnish)
8 slices lemon (optional)
8 slices lime (optional)
8 mint leaves (optional)

Scoop melon into balls.

To make dressing, whip cream until soft peaks form. Mix in mayonnaise, lemon juice, paprika, hot pepper sauce, Worcestershire sauce and tomato paste.

Stir crabmeat into dressing. Lightly mix in melon and toss ingredients gently until coated.
