- Be careful not to over-process in late stages of preparation. This salsa is best served 'chunky'.
Ingredients:
4 large, ripe tomatoes
1 cucumber
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 cloves crushed garlic
1/2 teaspoon crushed red chilli
1/2 tablespoon tomato paste
1/2 teaspoon sugar
salt and pepper to flavor

Chop tomatoes into small cubes.

Peel the cucumber, cut in half (lengthwise), scoop out seeds and cut into small cubes.

Place tomato and cucumber into food processor and roughly combine with olive oil, vinegar, garlic, tomato paste, sugar and salt & pepper.
