TANGY MAYONNAISE RECIPE

Makes: 2 cups     Est. Time: 10 mins     Difficulty: Two Stars


Ingredients:

2 egg yolks
½ teaspoon salt
4 tablespoons lemon juice
1 teaspoon dry mustard
1½ cups vegetable oil
Dash pepper

Directions:

1   Beat yolks until thick and lemon colored in a deep bowl.
2   Beat in dry mustard, salt, pepper, and 2 tablespoons of lemon juice.
3   Drop by drop add oil, while mixing, to mixture until ½ cup oil has been added. If you add oil too quickly, and mix begins to separate, beat one egg yolk in a second deep bowl, gradually beat in mixture, until smooth and well blended.
4   Continue to beat while adding another ½ cup oil in a thin stream. Beat in remaining lemon juice and remaining oil in thin stream until mix is creamy and thick.
