Ingredients:
Canola oil for frying
1 ¼ cup unsifted all-purpose flour
½ cup cornstarch
4 teaspoons sugar
½ teaspoon ground red pepper
1 cup water
2 large eggs, slightly beaten
1 large sweet onion, sliced into ¼ inch rings
¼ teaspoon salt

In large skillet, heat ¾ inch oil until deep-fat thermometer registers 375°F (190°C).

In medium size bowl, combine 1-cup flour, cornstarch, sugar, and red pepper. Stir in water and eggs until batter is just combined. Place remaining ¼ cup flour in wide mouthed bowl or pie plate.

In batches, coat onion slices with flour then dip coated rings into batter and place into hot oil. Fry onion rings until crispy and golden on one side; turn and fry until golden on the other side - about 6 minutes in all.

Drain cooked rings on paper towels and keep warm until ready to serve. Season rings with salt, or do it the southern way, and serve with powdered sugar!
