Ingredients:
½ cup finely shredded carrot
2 tablespoons minced green onion
2 tablespoons minced fresh parsley
1 tablespoon Parmesan cheese
2 teaspoons curry powder
1 pkg. (8 oz.) Neufchatel cheese, softened
Paprika and parsley, to garnish

In a bowl, combine carrot, onion, parsley, and Parmesan. Blend in the curry powder, and then mix in the cheese. Put the mixture into a serving dish and chill for 30 minutes to let the flavors blend.

Garnish with paprika and parsley. Serve with crackers or raw vegetables, or use it to make sandwiches. It keeps for a week in the refrigerator.
