Ingredients:
400g mixed dried fruits
1 cup brown sugar
250g butter or margarine
1 cup sweet sherry
1/4 cup water
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 tablespoon golden syrup
little grated lemon rind
1/2 cup slivered almonds
2 eggs, beaten
1 cup self-raising flour
1 cup plain flour

Place all of the above ingredients (except eggs and flour) into a large saucepan, bring to the boil, simmer for a few minutes.

Take from the heat, allow to cool slightly, then add eggs and flour. Blend well into the fruit mixture.

Turn into greased round cake pan. Bake in moderate oven for approximately 1 1/2 to 2 hours.

Test with skewer for doneness. Allow cake to cool in tin before turning out.
