Ingredients:
1/2 cauliflower
3 spring onions, chopped
1 small celery stick, chopped
1/3 cup (80 ml) unsweeted apple juice
4 teaspoons apple juice concentrate
2 tablespoons lemon juice
8 capers, well rinsed and chopped
2 tablespoons chopped parsley
pepper, to taste

Break cauliflower into flowerettes and blanch in boiling water for 30 seconds. Drain. Flush with cold water to cool. Drain well.

In a bowl, combine spring onions, celery, apple juice, apple juice concentrate, lemon juice, capers, parsley and a little pepper. Mix well.

Add cauliflower, toss and serve. Chill if preferred.
