Handy Hints:
- For optimum flavor, this dish should be prepared 2 days ahead and refrigerated, then reheated to serve.
Ingredients:
1 cup navy or cannellini beans
1½ cups tomato relish
4 teaspoons apple juice concentrate
2 teaspoons tomato paste
3 cloves garlic, crushed
250g mushrooms, roughly chopped
3 teaspoons lemon juice
black pepper (optional)
Directions:

Soak beans overnight and simmer in a covered saucepan until cooked.

Drain beans and combine with Tomato Relish, apple juice concentrate, tomato paste and crushed garlic in a lidded caserole dish and bake for 30 minutes at 180ºC (350ºF).

Add mushrooms and bake a further 30 minutes. Remove from the oven and add the lemon juice and a little black pepper if desired.

Either cool and refrigerate at this stage (if storing), or serve sprinkled lavishly with finely chopped parsley and accompanied with a hot green vegetable. Alternatively, you could try serving the beans atop wholemeal toast, dusted with Geska cheese.
