Ingredients:
4 chicken cutlets (about 1 lb.)
¼ cup + 1 tablespoon lime juice, divided
½ teaspoon pepper
12 slices whole wheat bread
1 avocado, peeled, pitted, and thinly sliced
1 small bunch arugula
½ cup alfalfa sprouts
¼ cup prepared salsa

Heat broiler. In baking dish, combine chicken and ¼ cup limejuice and pepper; cover and chill 10 minutes. Remove and broil on rack set in broiler pan 10 minutes, turning once, or until cooked through.

Meanwhile, toast bread. Brush avocado slices with remaining 1 tablespoon lime juice.

Layer each sandwich as follows: arugula, toast, chicken, avocado, alfalfa, and salsa. Top with remaining toast. (You can vary this recipe by using ¾ lb. Sliced smoked turkey, 4 oz. goat cheese, crumbled; or ¾ lb. Cooked salmon instead of the chicken.)
