Ingredients:
Olive oil, for frying
2 cups grated cheese
1 medium tomato, sliced
1 small red Chile pepper, seeded & finely chopped
1 small jalapeno pepper, seeded & finely chopped
½ cups chopped fresh cilantro
8 large flour or blue-corn tortillas
Guacamole (optional)
Directions:

Lightly coat a large frying pan with oil.

Sprinkle cheese, tomato slices, peppers, and cilantro over four of the tortillas. Top each with another tortilla. Fry one at a time over high heat for two minutes on each side, until cheese is melted.

Cut each into eight wedges with scissors or a sharp knife. Top each wedge with a dollop of guacamole, if desired.
